Here’s how you can make it:

Ingredients:

For the Guacamole

      • 3 ripe avocados

      • 1/2 cup diced onion

      • 3 tablespoons chopped fresh cilantro

      • 1 teaspoon minced garlic

      • lemon juice, salt and pepper to taste

    For the Roasted Chickpeas:

        • 1 can (15 oz) chickpeas, drained and rinsed

        • 1 tablespoon olive oil

        • 1/2 teaspoon paprika

        • 1/2 teaspoon cumin

        • 1/2 teaspoon garlic powder

        • Salt to taste

       

      Instructions:

      1. Roast the Chickpeas:

          • Preheat your oven to 400°F (200°C).

          • Pat the chickpeas dry with a paper towel to remove excess moisture.

          • In a bowl, toss the chickpeas with olive oil, paprika, cumin, garlic powder, and salt until evenly coated.

          • Spread the chickpeas in a single layer on a baking sheet.

          • Roast for 20-25 minutes, shaking the pan halfway through, until the chickpeas are golden and crispy. Let them cool.

        2. Prepare the Guacamole:

            • Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl. Mash the avocado with a fork until you reach your desired consistency (smooth or chunky).

            • Add the finely chopped onion and minced garlic to the mashed avocado. Mix gently.

            • Stir in the lime juice, salt, and pepper. Adjust the seasoning to taste.

            • Optionally, fold in chopped fresh cilantro.

          Tips:

              • Customization: Feel free to experiment with additional toppings or mix-ins like diced red bell pepper, corn, or even a sprinkle of feta cheese.

              • Storage: Guacamole is best served fresh. If you need to store it, keep it in an airtight container with plastic wrap pressed directly onto the surface to prevent browning.
